Instructions
- Cook the Sausage:
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon. Remove the sausage and set aside.

- Add Tortellini and Greens:
- Stir in the tortellini and cook according to package instructions (usually about 3-5 minutes). Add the fresh spinach or kale during the last minute of cooking until wilted.
- Combine and Serve:
- Return the cooked sausage to the pot and stir to combine. Taste and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese if desired.
