Ingredients:
2 large zucchinis
2 large yellow squash
2 teaspoons garlic powder
½ teaspoon ground black pepper
½ teaspoon salt or to taste
¼ c freshly grated parmesan cheese you can also use finely shredded parmesan cheese
2 tablespoons olive oil
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Slice into ¼-inch rounds the yellow squash and zucchini.
Step 3: Put the sliced veggies into a large mixing bowl.
Step 4: Add garlic powder, pepper, and olive oil. Toss everything until well combined.
Step 5: Transfer everything to a pan and spread it evenly.
Step 6: Sprinkle a generous amount of shredded cheese on top of the veggies.
Step 7: Place the pan inside the preheated oven and roast for about 10 minutes or until done.
Step 8: Broil for another 3 minutes or until done to your preferred colour and texture.
Step 9: Remove from the oven.
