Turkey Corn Chowder :
Ingredients
โ 2 tablespoons butter
โ 1 onion, chopped
โ 3 cloves garlic, minced
โ 2 cups diced cooked turkey
โ 4 cups chicken or vegetable broth
โ 1 cup diced potatoes
โ 1 cup frozen or fresh corn kernels
โ 1 cup heavy cream
โ 1 cup milk
โ 1 teaspoon dried thyme
โ 1/2 teaspoon paprika
โ Salt and pepper to taste
โ Optional: 1/4 cup chopped fresh parsley
Preparation
1. Sautรฉ Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes.
2. Add Turkey and Broth: Stir in the diced cooked turkey and pour in the chicken or vegetable broth. Bring to a simmer.
3. Add Potatoes and Corn: Add the diced potatoes and corn kernels. Simmer until the potatoes are tender, about 15-20 minutes.
4. Add Cream and Seasonings: Stir in the heavy cream and milk. Season with dried thyme, paprika, salt, and pepper. Heat through, but do not boil.
5. Serve: Garnish with chopped fresh parsley if desired. Serve the chowder hot and enjoy your comforting and hearty soup!
