Instructions:

  1. Prepare the Pan:
    • Line an 8-inch square baking pan with aluminum foil or parchment paper. Leave a bit of an overhang to make it easier to lift the fudge out later.
  2. Cook the Mixture:
    • In a medium saucepan, combine the sugar, butter, and evaporated milk. Stir the mixture over medium heat until the butter is melted.
    • Bring the mixture to a boil, stirring constantly. Once it reaches a rolling boil, let it cook for 4-5 minutes without stirring. Be cautious not to let it burn.
  3. Add the Chocolate:
    • Remove the saucepan from the heat. Stir in the chocolate morsels until they are completely melted and the mixture is smooth.
  4. Finish and Chill:
    • Stir in the vanilla extract and, if using, the chopped nuts.
    • Pour the fudge mixture into the prepared pan and spread it evenly with a spatula.
  5. Cool and Set:
    • Let the fudge cool at room temperature for about 2 hours, or until it is set. For quicker setting, you can place it in the refrigerator.
  6. Cut and Serve:
    • Once set, lift the fudge out of the pan using the foil or parchment paper overhang. Cut into squares and serve.
