Instructions:

- Cook the Mixture:
- In a medium saucepan, combine the sugar, butter, and evaporated milk. Stir the mixture over medium heat until the butter is melted.
- Bring the mixture to a boil, stirring constantly. Once it reaches a rolling boil, let it cook for 4-5 minutes without stirring. Be cautious not to let it burn.
- Add the Chocolate:
- Remove the saucepan from the heat. Stir in the chocolate morsels until they are completely melted and the mixture is smooth.
- Finish and Chill:
- Stir in the vanilla extract and, if using, the chopped nuts.
- Pour the fudge mixture into the prepared pan and spread it evenly with a spatula.
- Cool and Set:
- Let the fudge cool at room temperature for about 2 hours, or until it is set. For quicker setting, you can place it in the refrigerator.
- Cut and Serve:
- Once set, lift the fudge out of the pan using the foil or parchment paper overhang. Cut into squares and serve.
