Ingredients:
1 pound ground beef or ground turkey
1 small onion, chopped
2 cloves garlic, minced
1 packet (1 ounce) taco seasoning mix
1 can (15 ounces) diced tomatoes with green chilies (or just diced tomatoes)
1 cup frozen corn kernels
1 can (15 ounces) black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 package (32 ounces) frozen tater tots
Fresh cilantro or green onions, chopped (optional, for garnish)
Sour cream and salsa (optional, for serving)
Preparation:
Preheat oven: Preheat your oven to 375°F (190°C).
Cook the meat: In a large skillet, heat a bit of oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute. Add the ground beef or turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
Add seasonings and vegetables: Stir in the taco seasoning mix, diced tomatoes, corn, and black beans. Mix well and let simmer for 5 minutes to combine the flavors.
Assemble the casserole: Spread the meat mixture evenly in the bottom of a 9×13-inch baking dish. Sprinkle the shredded cheddar and Monterey Jack cheese over the meat mixture.
Top with tater tots: Arrange the frozen tater tots in a single layer on top of the cheese.
Bake: Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
Serve: Garnish with chopped fresh cilantro or green onions if desired. Serve with sour cream and salsa on the side.
