Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes

Servings: 6

Ingredients

3 bell peppers, Julian cut

2 white onions, Julian cut

Seasoning on steak

2 lb. Flank steak, thinly sliced

2 tablespoons Worcestershire sauce

1 tablespoon garlic powder

½ tablespoon onion powder

½ tablespoon cumin

1 tablespoon chili powder

1½ tablespoons salt

1 tablespoon pepper

⅓ cup lime juice

Directions

Step 1:

Stir together cumin, chili powder, onion powder, salt, and red pepper flakes in a small bowl, then set aside.

Step 2:

Add 2 tablespoons of olive oil to a large skillet and then heat over high heat for a minute

Step 3:

Add your sliced bell peppers, onion, and mushrooms to the heated olive oil. Saute for about 7 minutes until the vegetables are tender-crisp. During the last two minutes of cooking add in half of your seasoning mix and the minced garlic

Step 4:

Remove the vegetables from the pan and transfer them to a serving dish, but keep the skillet hot.

Step 5:

Return the skillet to high heat. Add the thinly sliced flank steak to the hot skillet and sprinkle in the remainder of the seasoning mixture, and Worcestershire sauce. Cook the steak for about 2 to 3 minutes, tossing constantly until the meat is medium-rare browned. (Flank steak is best-eaten medium-rare. For well done, add an additional 3 to 4 minutes).

Step 6:

When the meat is cooked, add the vegetables back in. Drizzle in lime juice and toss together.

Step 7:

Serve plain or top with sour cream, cilantro, guacamole, or salsa.

Tips

Skirt steak is the traditional cut used for fajitas. It used to be inexpensive, but now it’s not so cheap. Flank steak costs way less and is an excellent choice too.
