Southern Succotash :
Ingredients
β 2 tablespoons butter
β 1 small onion, chopped
β 1 red bell pepper, diced
β 2 cups fresh or frozen corn kernels
β 1 cup fresh or frozen lima beans
β 1 cup cherry tomatoes, halved
β 1/2 cup chicken or vegetable broth
β 1 teaspoon dried thyme
β Salt and pepper to taste
β 2 tablespoons chopped fresh parsley (optional)
Preparation
1. SautΓ© Vegetables: In a large skillet, melt the butter over medium heat. Add the chopped onion and diced red bell pepper, cooking until softened.
2. Add Corn and Lima Beans: Stir in the corn kernels and lima beans. Cook for 5-7 minutes, until the vegetables are heated through.
3. Add Tomatoes and Seasonings: Add the cherry tomatoes, chicken or vegetable broth, dried thyme, salt, and pepper. Stir and cook for an additional 5 minutes, or until the tomatoes are softened and the broth is mostly absorbed.
4. Garnish and Serve: Stir in the chopped fresh parsley if using. Serve the succotash warm as a side dish or light main course. Enjoy your Southern Succotash!
