Ingredients
For the Crust:
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or grease it well.
- Prepare the Crust:
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
- Add the eggs and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Make the Cheesecake Layer:
- In a medium bowl, beat the softened cream cheese until smooth and creamy.
- Add the granulated sugar, eggs, and vanilla extract, and beat until well combined and smooth.
- Assemble the Bars:
- Spread half of the crust mixture evenly into the bottom of the prepared baking pan.
- Pour the cheesecake mixture over the crust, spreading it evenly.
- Drop spoonfuls of the remaining crust mixture over the cheesecake layer, gently spreading it out as evenly as possible.
- Add the Cinnamon Sugar Topping:
- In a small bowl, combine the granulated sugar and ground cinnamon. Sprinkle this mixture evenly over the top of the bars.
- Bake the Bars:
- Bake in the preheated oven for 30-35 minutes, or until the top is set and the edges are lightly golden.
- Cool and Serve:
- Allow the bars to cool completely in the pan before cutting into squares. For easier cutting, you can chill the bars in the refrigerator for an hour or two.
