Slow Cooker Tropical Chicken :
Ingredients
โ 2 pounds boneless, skinless chicken breasts or thighs
โ 1 can (20 oz) crushed pineapple, undrained
โ 1/2 cup barbecue sauce
โ 1/4 cup soy sauce
โ 1/4 cup honey
โ 1 tablespoon grated fresh ginger
โ 2 cloves garlic, minced
โ 1 bell pepper, chopped
โ 1 onion, chopped
โ 1/2 teaspoon dried thyme
โ 1/2 teaspoon ground cumin
โ Salt and pepper to taste
Preparation
1. Add Ingredients to Crock-Pot: Place the chicken breasts or thighs in the bottom of the slow cooker. In a bowl, mix together the crushed pineapple (with juice), barbecue sauce, soy sauce, honey, grated ginger, minced garlic, chopped bell pepper, chopped onion, dried thyme, and ground cumin. Pour the mixture over the chicken.
2. Cook: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
3. Shred Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
