Broccoli Cheddar Soup (Panera Copycat)
Ingredients
β 4 cups fresh broccoli florets
β 1 cup shredded carrots
β 1/2 cup chopped onion
β 3 cups chicken or vegetable broth
β 2 cups half-and-half or heavy cream
β 2 cups shredded sharp cheddar cheese
β 1/4 cup all-purpose flour
β 4 tablespoons unsalted butter
β 1 teaspoon garlic powder
β 1/2 teaspoon paprika
β Salt and pepper to taste
β 1/4 teaspoon nutmeg (optional)
β Crusty bread for serving
Preparation
1. SautΓ© Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and sautΓ© until translucent. Stir in the shredded carrots and broccoli florets, and cook for 3-4 minutes.
2. Make the Roux: Sprinkle the flour over the vegetables and stir constantly for about 1 minute to cook the flour.
3. Add Liquid: Gradually whisk in the chicken or vegetable broth, and then pour in the half-and-half or heavy cream. Bring the mixture to a simmer and cook until the broccoli is tender, about 10-15 minutes.
4. Blend (Optional): For a smoother texture, you can use an immersion blender to puree the soup to your desired consistency. Alternatively, leave it chunky.
5. Add Cheese and Seasonings: Stir in the shredded cheddar cheese until melted and smooth. Season with garlic powder, paprika, salt, pepper, and nutmeg (if using).
6. Serve: Ladle the soup into bowls and serve with crusty bread. Enjoy your warm and comforting Broccoli Cheddar Soup!
