We all know how impressive layered desserts are, and how well they go round to feed a crowd. Well, this pumpkin delight is one of the most impressive layered desserts, having four lovely layers made of crunchy pecans, cream cheese, pumpkin and pudding and cool whip. Honestly, I don’t know how anything can top that! Serve this in place of pie at any family gathering and watch everyone sing your praises.

The process of making this pie might be time-consuming, requiring up to 3 hours of dedication. But the steps are really simple and you can easily follow them. At the end, this desert makes every second put in totally worth it.

Ingredients

1 cup Flour

½ cup Butter softened

¾ cup Pecans, chopped

8 oz. Cream cheese, softened

1 cup Powdered sugar

3 cups whipped topping, divided

2½ cups Milk

3 small pkgs. White chocolate instant pudding mix

1 can pumpkin puree

1 tsp. Pumpkin spice

Instructions

Layer 1 (buttery pecan crust):

Mix flour, butter and ½ cup of pecans together. Press into a greased 9×13 pan. Bake for 15 minutes at 350 degrees, then remove and let cool.

Layer 2 (whipped cream cheese):

Blend cream cheese and powdered sugar, add 1 cup of the whipped topping then spread over cooled pecan crust.

Layer 3 (creamy pumpkin pudding):

Mix milk, pudding mix, canned pumpkin, pumpkin spice and 1 cup whipped topping until smooth. Spread over cream cheese layer.

Layer 4:

Spread the remaining 1 cup of whipped topping over the pumpkin layer and then sprinkle the remaining ¼ cup of pecans.

Let chill for 3 hours, then serve and enjoy.

Tips 

Don’t prepare the pudding, just add the pudding mix (in powder form) into the mixture. Be sure to use the instant pudding mix so the layer sets quickly and prevents it from being runny.

Some brands of pumpkin are more watery than others. So if yours is watery, pour it into a strainer and remove the excess water. This will prevent the pumpkin layer from being runny.

You can make this recipe ahead of time, but typically not more than 24 hours in advance so that it stays fresh when you serve. Once prepared, place in the refrigerator until you’re ready to serve.

If any leftovers, you can freeze them by placing them in an airtight jar until you’re ready to serve. Allow thawing before serving.

Variations 

Instead of pecans, you can use other toppings like heath or toffee bits, chocolate chips, different crushed nuts, crushed graham cracker or pretzels.
