A simple but superbly delicious comfort recipe to enjoy at any time of the day, cottage cheese and needles is a throwback to the old days in Poland. 

Did I tell you a side of my family is from Poland? Oh yeah, my mum is half Polish and we actually spent a couple of Summers in Poland during my childhood. It’s been years now since I last visited Gdansk, but it was there I picked up this simple but crazy delicious recipe.

In English, we call it noodles and cottage cheese, or sometimes lazy man pierogies. But in Poland, we called it Kluski Z Serem. This recipe is one of the best comfort foods you could ever ask for. It’s super delicious and super easy to prepare, and is so versatile you could make like a million variations of this.

Polich noodles and cottage cheese is very similar to mac n’ cheese. There’s a reason Kluski Z Serem is a Polish child’s favorite food similar to how mac n’ cheese is an average American kid’s favorite food. This recipe can be made either savory or sweet, with sweet the best variation for kids (obviously!). This Polish delicacy is the perfect quick meal for when you’re in a hurry or when you’re just too tired, but the kids won’t let you breathe.

This meal is a perfect main course, but you could also have it as a side dish with any meal of your choice. It’s perfect either way! Kluski Z Serem is filling and packed with protein from the cheese. It’s incredibly easy to make, even Polish kids make it themselves.

I often make this meal whenever I’m feeling nostalgic and sentimental about my time in Poland. But you can make it to get a taste of what Poland feels like

Yield: 6 servings

What you need

½ cup butter

1 small onion, diced

16 ounces egg noodles

16 ounces cottage cheese

½ cup sour cream

½ teaspoon sea salt

¼ teaspoon ground black pepper

Directions

Step 1:

Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter for about 7 minutes until it softens

Step 2:

Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water for about 5 minutes, stirring occasionally until they are cooked through but firm to the bite. Drain the noodles and return to the pot.

Step 3:

Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir for about 8 minutes until heated through and warm. Take down, allow to cool about 5 minutes, then serve.

Tips and Variations

  • For the sweet version of this recipe, you can add about ½ cup of sugar, cinnamon sugar, vanilla sugar, honey, or sweetener to the recipe
  • You can fry some breadcrumbs with butter and add to this dish.
  • You can prepare a vegan variation of this recipe, where you replace butter with vegan butter, sour cream with vegan sour cream and cottage cheese with almond cheese.
  • You can use any type of noodles or pasta for this recipe. Some good choices include fusilli, penne,  pappardelle, rotini, macaroni, and others.
