DIRECTIONS
Preheat oven to 350° F.
Grease a 9×13 baking dish with butter or cooking spray.
Peel the peaches.
Cut peaches into 8 slices each.
Open the crescent rolls and separate each triangle.
Roll each peach slice in a crescent roll beginning at the wide end.
Place the rolls in the prepared baking dish. They will be touching.
In a medium microwave safe bowl, or a saucepan, melt the butter, then add the sugar and barely stir.
Add vanilla, cinnamon, and flour to the butter mixture and stir.
Pour the butter mixture over peach rolls in baking dish.
Pour the soda around the edges of the pan and a little down the center. Make sure not to pour directly on the peach rolls.
Bake in preheated oven for 30-40 minutes – you want the top to be a nice golden brown and crispy.
Serve with ice cream or whipped cream and spoon a bit of the sauce from the pan over the top.
NOTES
SODA: You can use any lemon-lime soda. If pouring from a larger bottle, you will need 1 cup (8 oz.). To cut back on sugar, diet or “zero” versions are great to use. I have also used Fresca and it is great as well.
SAUCE: Save any remaining sauce – transfer to an airtight container and reheat to drizzle over ice cream!
PREPARATION: This recipe is quick and easy, so it is best made right before baking. Making ahead of time or freezing isn’t recommended. Serving it freshly baked (and possibly still warm) is what makes this fantastic.
PEACHES: You can peel the peaches if you want but I don’t. The skin becomes tender during baking, so I just leave them on. If it is not peach season, you can use frozen peaches (thawed) or canned peaches.
GLUTEN FREE: Substitute a gluten free 1:1 flour, I use Bob’s Red Mill, for the flour. It will be delicious and no one will know it is gluten free.
