Ingredients
¼ cup and 1 tablespoon of unsalted butter
1 cup of diced onion
⅓ cups of chopped celery
¼ cup of all-purpose flour
2 cup of milk
2 cup of chicken broth
2 cup of cooked and chopped broccoli florets
1 cup of matchstick carrots
2 cup of shredded sharp cheddar cheese
Salt and pepper to taste
Directions
Step 1: Melt 1 tbsp butter in a saucepan over medium heat. Add onions and celery and sauté until they become soft. Remove from the heat and set aside.
Step 2: Add ¼ cup of butter and ¼ cup of flour to the saucepan, mix and stir together to combine. Cook, with continuous stirring for about 3 minutes.
Step 3: Whisk the milk and the chicken broth together, add salt and pepper to taste. Cover and simmer for about 15 minutes.
Step 4: Add carrots, broccoli, onions, and celery to the saucepan, cover and allow to simmer for another 15 minutes.
Step 5: Put the cheddar cheese and stir until it is completely melted. Take down and serve.
