Ingredients

4 boneless skinless chicken breasts, pounded to ½ inch thickness
½ teaspoon of seasoning salt
4 slices bacon
¼ cup yellow or spicy brown mustard
¼ cup of honey
2 tablespoons light mayonnaise
2 tablespoons non-fat plain yogurt
½ tablespoons dried onions flakes
1½ teaspoon olive oil
1 cup sliced fresh mushrooms
¼ cup reduced-fat cheddar cheese, shredded

The process

Step 1: Sprinkle the chicken breasts with seasoning salt, and leave it to absorb for 5 minutes. During this wait time, line a microwave-safe plate with paper towels, put the bacon on top, and then cover the bacon with more paper towels.

Step 2: Allow the bacon to cook for about 4 minutes until it becomes crisp. Blot it well, leave it slightly cool and crumble, then leave for a while.

Step 3: Place the mushrooms in a small bowl and then let it cook in the microwave for a minute, till it’s soft. Set it aside. Mix mustard, honey, mayonnaise, yogurt, and dried onion flakes in a small bowl and also set aside.

Step 4: Coat the non-stick pan with cooking spray, add oil and then heat it. Put the chicken in the pan and sauté over medium heat for about 3 to 5 minutes per side, until each side becomes brown. Then, move the chicken to a baking dish that has been coated with cooking spray.

Step 5: Spread most of the honey mustard sauce over each chicken breast, add the mushrooms to the layer of each piece, then, add the remaining honey mustard sauce over it, and then sprinkle each piece with crumbled bacon.

Step 6: Top each of the pieces with a tablespoon of shredded cheese. Leave it to bake in a 350 degree preheated oven for about 15 minutes, or until the cheese is melted and the chicken is done. Take out and serve

Tips:
Instead of onion flakes, you can use 1 tablespoon of chopped green scallions.
