If you love chicken alfredo, you’re not alone. It’s simple, and elegant, and it takes almost no time to put together. Here is a fun, simple recipe to make this, and we even have tips to make this different and perfect for your needs.

INGREDIENTS

1/2 c. heavy cream
1 c. freshly grated Parmesan
1 1/2 c. whole milk
1 1/2 c. low-sodium chicken broth
2 tbsp. extra-virgin olive oil
2 boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

2 cloves garlic, minced
8 oz. fetuccini

Freshly chopped parsley, for garnish

Steps

Grab a skillet and heat up some oil on medium or high heat

Put the chicken in there, seasoning with pepper and salt, and then cook until the meat is cooked all the way, usually 8 minutes a side. Let it sit for about 10 minutes, then cut it up

Add the broth, milk, and the garlic next, seasoning this with pepper and salt, and let this simmer. Put the fettuccine in there and stir it quite often for about 3 minutes. Let this sit al dente in there for another 8 minutes

Add the parmesan and the heavy cream into there until it thickens up

Take it out and put the chicken n there, seasoning more as needed and putting some parsley on top to garnish this to serve!

Tips

How can I make the sauce richer?

You sure can! If you want a sauce that’s richer and thicker, put half and half or heavy cream in there instead of just using milk. It does make it a bit sweeter, but some people like that rather than just using milk in there.

Can I use dark meat in this?

Some people prefer to use dark meat in their pasta dishes, and this is no exception. The only difference is you will need to account for more cooking time. chicken thighs are a great way to make this work, and if you want to use thigh meat instead, consider just baking this in the oven for a bit longer.  There are tons of great dark meat recipes if you’d like to use that rather than chicken breasts.

Do I have to use fettuccine noodles?

Nope! Angel hair or even spaghetti is a great way to make this work.  The main thing you need to factor in is that it can be put fully in the cooking liquid to make sure that it is cooked freely.

Can I add veggies to this?

Veggies work great in pasta dishes.  Spinach is a classic for this kind of dish, but if you like tomatoes, you can halve some grape tomatoes once the pasta is cooked through to add a little bit of veggies to this.  A leafy green works best in this, since it does add to the flavor, and makes it fun for everyone.

How can I make this crunchy for me?

Bread crumbs work with this, and you can use panko bread crumbs, toasting these directly in the skillet used for everything, and you can also garnish the top of this with a handful.  It is great because it adds a fun, crunchy texture to this, and the coolest part, is that this works for practically all kinds of pasta dishes too!
