Woolworth ice box cheese cake is an amazing and delicious, light and fluffy, no-bake dessert with a hint of lemon flavor on top of a graham cracker crust. This American cuisine is perfect for weekend nights, or when lots of family are around the house.

Anyone who remembers the famous Woolworth departmental store will remember their amazing cheesecake that caught the attention of so many. I was reminiscing on my childhood the other day, and how my dad would drive use to these Woolworth stores, and how I’d only be interested in the cheesecakes. You can’t blame a little me. These cakes were amazing in every way. Well, that memory walk prompted me to launch a search for the famous cheesecake’s recipe and after hours of digging, I finally came upon the Holy Grail!

I’ll be frank with you; this takes a lot of time, and patience. But it’s easy to make, and requires no bake at all. Plus, once you’re done, you’d be glad that you spent all that time waiting because the effort was definitely worth it. There are delicious cheesecakes, and then there’s this Woolworth cheesecake, and I pick the Woolworth cheesecake every single day, and 3 times on Sundays.

Ingredients

Crust:

2 cups graham cracker crumbs

1 tablespoon granulated sugar

½ cup (1 stick or 113g) butter, melted

Filling:

1 block (8 ounces) cream cheese, room temperature

1 cup (200g) granulated sugar

2 teaspoons vanilla

1 box (3 ounces) lemon jello mix

½ cup boiling water, about 212°F

½ cup cold water, about 50°F

1 can (12 ounces) evaporated milk, chilled

How to prepare

Step 1:

Allow the bowl of the stand mixer and the whisk attachment to chill for at least 30 minutes. Then spray the baking dish with a non-stick cooking spray. Add graham crackers and sugar, mix together in a separate mixing bowl.

Step 2:

Add melted butter and mix until all ingredients are fully incorporated, and reserve about ¼ cup of the graham cracker mixture and set aside. Then press the remaining crumbs into the bottom of the prepared baking dish firmly and set aside.

Filling:

Step 3:

Cream together cream cheese and sugar with a hand mixer in a mixing bowl. Then add vanilla and mix together for about 2-3 minutes or until it is well blended and set aside.

Step 4:

Add jello mix and boiling water in a large bowl. Whisk for about 1-2 minutes or until the jello mix dissolves. Then add cold water and place the mixture in the refrigerator for a few minutes.

Step 5:

Add the chilled bowl and whisk attachment to the stand mixer, also add the evaporated milk and mix on high for about 5 minutes or until soft peaks form. Add the jello mixture and whisk for 30 more seconds, add cream cheese mixture and whisk for another30 more seconds.

Step 6:

Pour the mixture into the pan and top with the reserved graham cracker mixture.

Leave in the freezer overnight and serve chilled!
