If this happens to you, you’re not alone. It’s a challenge for those with diabetes to find the perfect foods to eat, but you’re not alone. This is a diabetic-friendly strawberry cheesecake.

The beauty of this one too, is you don’t have to use the oven either. If you don’t feel like waiting, you don’t have to, as this cake fits perfectly in the fridge and it’s pretty easy to make once you’ve gotten the hang of it.

Ingredients :

3/4 cup graham cracker crumbs
3 tablespoons butter, melted
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg1 (8 ounce) package cream cheese, softened
1 1/2 cups milk
1 (1 ounce) package cheesecake flavor sugar-free instant pudding mix
2 pints fresh strawberries, sliced

Steps

Get the melted butter, cracker crumbs from the graham crackers, nutmeg, and cinnamon, putting each of these into a bowl and mixing this together.

Put all of this together into a small dish for pies, and then, press it in with a cup. Let it sit in the fridge for a bit to set while you proceed to make the filling for this.

Get the cream cheese, beating this in a bowl to mix using a mixer so that the item softens, and then, lower your speed, beating the milk in a bit each time until it starts to get a little bit watery in terms of texture. Get a spatula, and then scrape the cheese from the sides of your bowl to mix it together if needed.

Take the pudding mix, beat this into there, so that the filling becomes smooth and thick.

Put half of this filling of cream cheese into the bottom portion of your crust, and then, put half of the strawberries on top of this.

Repeat this with the cream cheese layer and the strawberries until you’ve run out of both of these.

When finished, put this pie in the fridge and then let it sit until everything’s cold and set. This could take an hour, sometimes a bit longer depending on the consistency of the cheesecake.

Slice it up and serve!

How long should it sit in the fridge?

Ideally, an hour minimum is what you should be going for as this is enough time for the mixture to properly set as needed. You can always keep this there for longer, but ideally don’t leave it in there overnight.

Can I freeze this one?

Some people like to freeze this, and that might work, but that’s not always ideal for this sort of thing. Do be mindful of the texture of this and what you’re going for, because if it freezes for too long, it can make the cream cheese hard.

Do I have to use fresh strawberries?

You don’t have to, but for the least sugar possible, have fresh strawberries on hand. You can always just make the cream cheese filling bigger, and then add the strawberries on top if you’d like to do that.
