Ingredients

1 cup butter

½ cup brown sugar packed

1 tsp vanilla extract

3 cups quick-cooking oats

1 cup semisweet chocolate chips

½ cup peanut butter

How to Prepare

Step 1:

Grease a 9×9 inch square pan and set it aside.

Step 2:

Melt butter in a large saucepan over medium heat. Stir in brown sugar and vanilla to it. Then add oats and allow to cook on low heat for a few minutes.

Step 3:

Pour half of the oat mixture into the greased pan and use a spatula to press down. Then set it aside.

Step 4:

Melt chocolate chips (reserving some) and peanut butter in a small saucepan over low heat. Stir frequently until the mix has a smooth consistency. Pour the chocolate mix over the oat crust, and spread evenly using a knife or spatula.

Step 5:

Crumble the remaining oat mixture over the chocolate layer, gently pressing in with a spatula

Step 6:

Melt the remaining chocolate chips to spray over the top. Cover the pan and place in the refrigerator for about 2 hours or overnight. Remove and bring bars to cool at room temperature before cutting. Serve and enjoy!

Variations

In the absence of quick-cooking oats, you can use rolled or old-fashioned oats. However, these oats need extra time to soften. Quick-cooking oat is more processed and requires the shortest amount of time to cook.
