Muffins are a great breakfast treat, but they aren’t for everyone. Now doughnuts are something people love, however they’re messy, and sometimes they fall apart.
What if you could have the taste of a doughnut, but in a convenient shape like a muffin?
You can get that, and with this recipe, it’s literally a muffin that tastes just like doughnuts.
How is that possible? Read on to find out how you can make a doughnut muffin not only real, but also something that’s the perfect to-go breakfast snack that you’ll enjoy.
What you need:
3/4 cup sugar
1 large egg
1 1/2 cups all-purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
2 Tbsp butter, melted
1/2 cup sugar, for rolling (I added in a few shakes of cinnamon)
Steps
Preheat your oven to 350 and then, get a muffin tin. Make sure to grease this lightly with a cooking spray or something that’ll help remove your muffins.
Get a big bowl, and then beat together the egg along with the sugar until it has a light color to it.
From there, add in the egg mixture to the light brown mixture after you’ve whisked the baking powder, flour, nutmeg, and the salt, and form there make sure it’s all mixed so that it’s combined well.
Put the milk, vegetable oil, along with the vanilla extract into this mixture so that everything’s combined.
Take the batter, dividing all of this into 12 different cups, filling them about three quarters of the way full.
Put this in the oven, bake this for around 18 or so minutes, until you put a toothpick in and this is clean.
After they’re put in, melt some butter and get the rest of the sugar the recipe requires. Put tis in a bowl and mix this together until it’s combined with the butter.
From there, you want to brush every muffin with the butter, and then, roll this further into some sugar. Alternatively, you can make this a glaze, and also add it into the muffins as well by coating the top of this.
Let everything sit on the wire rack until it’s all properly combined and then serve!
Tips
Can I save these for later?
You can! They’re actually best left in a container which is airtight, so get something that holds the muffins well, and keeps them nice and fresh. You don’t have to put them in the fridge like other recipes.
Are they okay in the freezer?
Eh, they’re better left outside of the freezer. These can get really hard really fast.
If you absolutely must, put them in the fridge and then heat them up when you’re ready to eat them for best results.
What’s better, a glaze or rolling them in sugar?
Some people like to add a glaze to the very top of this to make it have a great texture. Other people prefer the rolling in sugar since it’s good for full covering. Really, it ultimately depends on what you want from this muffin, and what you’d like in terms of the texture, and how sweet this is for you to enjoy.
