Mashed Potatoes and Green Beans with Gravy
Mashed Potatoes
Ingredients:
2 lbs russet or Yukon Gold potatoes
1/2 cup milk (more if needed)
1/4 cup unsalted butter
Salt and pepper to taste
Instructions:
Prepare the Potatoes:
Peel and cut the potatoes into even chunks.
Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt.
Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Mash the Potatoes:
Drain the potatoes and return them to the pot or a large bowl.
Add the butter and mash until smooth.
Gradually add milk until you reach your desired consistency.
Season with salt and pepper to taste. Keep warm.
Green Beans with Gravy
Ingredients:
1 lb fresh green beans, trimmed
2 tbsp olive oil or unsalted butter
2 cloves garlic, minced
1 tbsp all-purpose flour
1 cup beef broth (use the same broth as for the mashed potato gravy if available)
Salt and pepper to taste
