Loaded Zucchini Bake :
Ingredients
โ 4 medium zucchinis, sliced into rounds
โ 1 tablespoon olive oil
โ 1/2 pound ground beef or sausage
โ 1 onion, chopped
โ 2 cloves garlic, minced
โ 1 cup shredded cheddar cheese
โ 1/2 cup grated Parmesan cheese
โ 1/2 cup sour cream
โ 1/2 teaspoon dried oregano
โ 1/2 teaspoon dried basil
โ Salt and black pepper to taste
โ 1/4 cup chopped fresh parsley for garnish (optional)
Preparation
1. Preheat Oven: Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a baking dish.
2. Cook Zucchini: In a large skillet, heat olive oil over medium heat. Add the sliced zucchini and cook until slightly tender, about 5 minutes. Remove from the skillet and set aside.
3. Cook Meat: In the same skillet, add the ground beef or sausage. Cook until browned, breaking it up with a spoon as it cooks. Add the chopped onion and garlic, and cook until the onion is soft. Drain any excess fat.
4. Combine Ingredients: In a large bowl, mix together the cooked meat mixture, cooked zucchini, shredded cheddar cheese, grated Parmesan cheese, sour cream, dried oregano, dried basil, salt, and black pepper.
5. Bake: Spread the mixture evenly in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
6. Serve: Garnish with fresh parsley if desired. Serve hot and enjoy!
