Lemon Butter Veggies and Sausage
Ingredients
β 1 pound smoked sausage, sliced into rounds
β 2 cups broccoli florets
β 1 red bell pepper, sliced
β 1 zucchini, sliced into half-moons
β 3 tablespoons butter
β 1 lemon, juiced
β 2 cloves garlic, minced
β Salt and pepper to taste
Preparation
1. Cook Sausage: In a large skillet, cook the sliced sausage over medium heat until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
2. SautΓ© Veggies: In the same skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for 1 minute until fragrant. Add the broccoli, red bell pepper, and zucchini. Cook for 5-7 minutes, stirring occasionally, until the veggies are tender but still crisp.
3. Add Lemon Juice: Return the sausage to the skillet with the veggies. Pour in the lemon juice, and season with salt and pepper. Stir well to combine and heat through for an additional 2-3 minutes.
