Late Summer Peach Soup :
Ingredients
โ 6 ripe peaches, peeled, pitted, and chopped
โ 1 small onion, chopped
โ 2 cloves garlic, minced
โ 2 tablespoons olive oil
โ 4 cups vegetable or chicken broth
โ 1 teaspoon fresh thyme leaves
โ 1/2 teaspoon ground ginger
โ Salt and pepper to taste
โ 1/2 cup heavy cream or coconut milk (optional)
โ Fresh basil or mint for garnish
Preparation
1. Sautรฉ Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
2. Cook Peaches: Add the chopped peaches to the pot and cook for about 5 minutes, stirring occasionally, until the peaches start to soften.
3. Add Broth and Seasonings: Pour in the broth, add the fresh thyme, ground ginger, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the peaches are very tender.
4. Blend Soup: Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth. Return the soup to the pot if using a blender.
5. Add Cream (Optional): If desired, stir in the heavy cream or coconut milk for a creamier texture. Heat through without boiling.
