  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2-3 jalapeños, seeded and finely chopped (adjust to taste)
  • 4 slices of bacon, cooked and crumbled (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Jalapeño Mixture:
    • In a medium bowl, mix together the softened cream cheese, shredded cheddar cheese, shredded mozzarella cheese, chopped jalapeños, garlic powder, onion powder, salt, and pepper. If using, mix in the crumbled bacon.
  2. Assemble the Sandwiches:
    • Spread butter on one side of each slice of bread.
    • On the unbuttered side of two slices, spread a generous amount of the jalapeño mixture.
  3. Cook the Sandwiches:
    • Preheat a skillet or griddle over medium heat.
    • Place one slice of bread, buttered side down, on the skillet. Top with the other slice, buttered side up.
    • Cook until the bread is golden brown and the cheese mixture is melted, about 3-4 minutes per side. If the bread is browning too quickly, lower the heat to ensure the cheese has time to melt.
  4. Serve:
    • Remove the sandwiches from the skillet and let them cool for a minute before cutting in half and serving.

  • Adjust the number of jalapeños based on your heat preference. For a milder flavor, remove more seeds and ribs from the jalapeños.
