1 cup potato, diced

1 cup onion, diced

1 cup celery, diced

1 cup carrot, diced

1/3 cup melted margarine

1/2 cup all-purpose flour

2 cups chicken broth

1 cup half-and-half

1 teaspoon salt

1/4 teaspoon pepper

4 cups chicken, cooked and chopped

2 pie crusts ( either store bought or your own recipe)

Steps

Preheat your oven to 400. From there, sauté the celery, the onion, potatoes, and the carrots within the margarine for about 10 minutes.

Put the flour into the mixture that’s sauteed, and then stir this quite well.

Cook this for about a minute, stirring the entire time. combine both the half and half and the broth together, and then, you can start to pour this directly into your vegetable mixture that you have.

Cook everything together over a medium heat, or until it becomes bubbled and thick, which is a sign that it’s the correct direction to go.

From here, stir in some salt and pepper, seasoning it to taste if you need more of one or the other.

Add in your chicken, and from there, continue to stir. From there pour this into some small casserole dish, and then, top this with the pie shell that you have, either the one that you’ve made, or the pie shell that you’ve bought from the store.

You should have the pie shell covering the entire top of this, and the inside of this touching the sides.

Bake this for about 30-40 minutes, or until the crust becomes flaked and golden. That’s a sing that it should be done.

Take it out, and then, you can put it on a cooling rack for about 15 minutes so that it’s cooled down.

From there, slice it up into a pie shape, and then serve! This is a dish that does work well on its own if you like to use it like that. You can also use this as a main dish, with a nice side salad to create a wonderful dinner.

When you’re done, cover this with some foil and then put it in the fridge. You can take this out and then serve it later on, or warm it up.
