Ingredients:
1 lb (450g) sirloin steak, sliced into strips
1 lb (450g) baby potatoes, halved or quartered if large
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons unsalted butter
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 400Β°F (200Β°C).
In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper until evenly coated. Spread the potatoes in an even layer on a baking sheet.
Roast the potatoes in the preheated oven for about 20-25 minutes, or until tender and golden brown, flipping halfway through cooking. Remove from the oven and set aside.
While the potatoes are roasting, season the sliced steak with salt and black pepper to taste.
Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned steak strips and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Transfer the cooked steak to a plate and set aside.
