I don’t go for dinners unless it’s my favorite chicken potpie sitting right on my table. Besides, chicken potpie is a soft and yummy crust-rich snack. Let’s prepare the food!

Prep & Bake time: 40 minutes Each   Total time: 1 hour 20 minutes   Makes: 8 servings

Ingredients

4 cups of pie crust (refrigerated)

1 cup of all-purpose flour

1 cup of frozen corns

1 teaspoon of dried thyme

1 1/2 half cup of whole milk

3 cups of chicken broth

1-3/4 cups of chopped carrots

2 cups of diced potatoes

1 ¼ teaspoon of salt

4 cups of cubed chicken (cooked)

1 1/2 cups of cubed butter

2/3 cup of finely chopped onions

Splash of white wine (optional)

1 cup of frozen peas

3/4 teaspoon of ground pepper

Directions

First, preheat the oven to about 425°F and get a saucepan ready.

Pour the potatoes and carrots into the saucepan and boil for some minutes. Reduce the heat. Boil for an extra 10 minutes till the chopped ingredients drain.

Next, place a large skillet on medium-high heat. Pour the butter and heat for a few minutes. Then, add the onion, stir and cook.

Add the flour, seasonings, chicken broth, and milk. Stir well until you obtain a blended mixture. Bring the blended mixture to a boil and stir till it thickens.

Pour the peas, corns, chicken, and potato-carrot mix into the blended mixture. Then, turn off the heat.

In two 9-inches pie plates, unroll a pie crust (one on each plate). Cut out the crust with the edge of the plate and pour the chicken mixture.

Unroll the remaining crusts and carefully place them over the filling. Trim and cut out the flute edges. Seal the edges and cut slits in the tops.

Bake the half-made chicken potpie for about 40 minutes until it turns light brown.

Cool the savory, favorite chicken potpie for some minutes. Cut and serve!
