Easy White Queso Dip
Ingredients

โ 2 tablespoons all-purpose flour
โ 1 cup milk
โ 1 cup heavy cream
โ 2 cups shredded white cheddar cheese
โ 1 cup shredded Monterey Jack cheese
โ 1/2 teaspoon garlic powder
โ 1/4 teaspoon onion powder
โ 1/4 teaspoon ground cumin
โ 1/4 teaspoon paprika
โ Salt and pepper to taste
โ Optional: 1/4 cup diced green chilies
Preparation
1. Make the Roux: In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes, until lightly golden.
2. Add Liquids: Gradually whisk in the milk and heavy cream. Bring the mixture to a simmer, stirring frequently.
3. Add Cheese: Reduce heat to low and gradually stir in the shredded white cheddar and Monterey Jack cheeses until melted and smooth.
4. Season: Stir in the garlic powder, onion powder, ground cumin, paprika, salt, and pepper. If using, add the diced green chilies.
