Easy Potato Soup :
Ingredients
โ 4 large potatoes, peeled and diced
โ 1 small onion, chopped
โ 3 cloves garlic, minced
โ 4 cups chicken or vegetable broth
โ 1 cup milk
โ 1/2 cup sour cream (optional)
โ 2 tablespoons butter
โ Salt and pepper to taste
โ 1 cup shredded cheddar cheese (optional)
โ Chopped green onions or bacon bits for garnish (optional)
Preparation
1. Cook the Potatoes: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened, about 3-4 minutes.
2. Add Potatoes and Broth: Add the diced potatoes to the pot, then pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
3. Blend the Soup: Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
4. Add Milk and Season: Stir in the milk and sour cream (if using). Season with salt and pepper to taste. Heat through but do not boil.
5. Add Cheese: If desired, stir in shredded cheddar cheese until melted and well combined.
