I am completely fascinated with apple recipes. But, let’s face it, who isn’t? After all, they keep producing more and more delectable apple-based recipes, each one seeming better than the last.
Apple fritters are one of my favorite apple recipes.

They are delectable deep-fried doughnuts stuffed with apples and cinnamon and topped with a simple three-ingredient glaze. These delicious Apple Fritters are simple and quick to make. In approximately thirty minutes, you can have them all.

They’ll be a hit with your family and friends, but make sure you save a few for yourself, or they’ll be gone before you know it. My children’s favorite recipes are these, and they can’t get enough of them! They’re always demanding that I make them, and they never leave any leftovers when I’m done.

Apple fritters are best enjoyed shortly after you cook them but they will stay up to two days covered loosely with paper towels in a brown paper bag.

Serve this with a warm glass of milk or any beverage of your choice. They’re excellent as breakfast and incredibly delightful as a dessert snack.

Ingredients

3-4 cups apples, diced about 2-3 apples, peeled and diced into bite-size pieces
1 tablespoon lemon juice fresh
1 ¼ cup all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon salt
2 teaspoons baking powder
Pinch nutmeg or apple pie spice
Pinch ground ginger (optional)
1 tablespoon granulated sugar
2 large eggs at room temperature
1/3 cup milk
1 tablespoon melted butter cooled
1 teaspoon vanilla extract
Vegetable oil for frying

Glaze:

½ teaspoon vanilla extract
1 cup confectioner’s sugar
2-5 teaspoons milk or water

Instructions

Step 1:Dice your apples, place in a bowl and add lemon juice. Whisk eggs in a separate bowl and add milk, vanilla, and cooled melted butter, whisk together until it is all combined.

Step 2:Combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger together in another medium sized bowl, add the dry and wet ingredients together and mix well until a dough is formed, then fold in the apples.

Step 3:Pour 3-4 cups of oil in a sauce pan, heat oil over medium heat until the oil reaches 375 degree thermometer, with a candy thermometer or an instant read thermometer.

Step 4:Drop batter into oil, using a measuring cup about ¼ cup or 1/3 cup, then fry until the outside is golden brown. Turn to the other side and fry other side for about 4-5 minutes or until it is golden brown.

Step 5:Transfer to the cooling rack and let cool, then repeat with all the batter.

Glaze:

Combine the sugar, vanilla, and 2 teaspoons of milk (or water) in a small bowl, and add more milk, a teaspoon at a time until they are well combined. Sprinkle the glaze over the fritters and allow to dry.

Tips and variations:

•You can use almond extract instead of vanilla extract.
•For the glaze, add a little cinnamon or apple pie spice to the confectioner’s sugar for the added flavor.
•Do not allow the oil gets too hot as it will burn your batter and leave it uncooked. Make sure you keep the temperature at a medium-low once it reaches 375 degrees.
