Ingredients:
1 tablespoon butter, melted
1 c Shredded Cheddar Cheese
2 eggs, slightly beaten
1 c Mayonnaise
4 c Zucchini, diced into 1-inch pieces
¼ c Panko Breadcrumbs
1 teaspoon Pepper
¾–1 teaspoon Garlic Powder
Directions:
Place a large pot with water on the stove and turn the heat to high.
Add the zucchini slices, then cook for about 3 minutes or until done.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Drain and rinse with cold water to stop the cooking process.
Add mayonnaise, zucchini, eggs, garlic powder, pepper, and cheddar cheese into a mixing bowl. Stir until well blended.
Apply cooking spray to a 1 ½-quart baking dish.
Transfer the zucchini mixture into the prepared baking dish and spread it evenly.
In another bowl, add melted butter and Panko bread crumbs. Stir until well blended.
Add the mixture over the casserole and spread it evenly.
Place it in the preheated oven and bake for about 35 minutes or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.

Notes:
If you want to freezer the zucchini, cook and add them into a bowl with cold water to stop the cooking process. Drain and transfer them onto a baking sheet lined with parchment paper. Place it inside the freezer.
