Ingredients
1 (7-ounce) bag Doritos, crushed
2-3 cups diced cooked chicken
1 cup sour cream
1 can of condensed cream of chicken soup
¼ cup finely minced onion
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ cup grated sharp or mild cheddar cheese
½ cup grated mozzarella cheese
Fresh parsley, for garnishing
How to prepare
Step 1:
Preheat the oven to 350 degrees Fahrenheit.
Step 2:
Spray the baking dish with non-stick cooking spray or grease the 2-quart casserole dish.
Step 3:
Cover the bottom of the casserole with about 2 cups of the crushed Doritos.
Step 4:
Combine the diced cooked chicken, sour cream, condensed soup, onion, chili powder, garlic powder, salt, and pepper in a large bowl.
Step 5:
Put the chicken mixture on top of the crushed Doritos in the casserole with a spoon. After that, sprinkle the remaining crushed chips on the chicken mixture while you top it with the shredded mozzarella and cheddar cheeses.
Step 6:
Bake in the preheated oven until the topping is melted and slightly brown. Remove from the oven and serve.
Tips and Variation:
You can make the casserole ahead of time if you want to make the whole recipe on time.
You can also add a can of diced mild green chilli peppers or a finely chopped jalapeno pepper to the chicken filling mixture for a more spicy taste.
