Instructions:

  1. Brown the Beef:
    • Heat olive oil in a skillet over medium-high heat.
    • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
  2. Prepare the Crock Pot:
    • Transfer the browned beef, onion, and garlic to the Crock Pot.
  3. Add Vegetables and Liquids:
    • Add the sliced carrots, chopped celery, chopped bell pepper, diced tomatoes, tomato sauce, and beef broth to the Crock Pot.
  4. Season:
    • Stir in the dried basil, oregano, paprika, salt, and pepper.
  5. Cook:
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  6. Add Frozen Vegetables:
    • About 30 minutes before serving, add the frozen peas and corn. Stir well.
  7. Optional Pasta:
    • If you’re adding pasta, cook it separately according to package instructions and add it to the soup right before serving. If you add it directly to the Crock Pot, it might become too mushy.
  8. Serve:
    • Taste and adjust seasoning if needed before serving.
