Crock Pot Chicken Alfredo :
Ingredients
โ 2 pounds boneless, skinless chicken breasts or thighs
โ 1 can (10.5 oz) cream of chicken soup
โ 1 cup chicken broth
โ 1 cup heavy cream
โ 1 cup grated Parmesan cheese
โ 1 packet (1 oz) Italian seasoning mix
โ 2 cloves garlic, minced
โ 8 oz fettuccine or penne pasta
โ Salt and pepper to taste
โ Optional: chopped parsley for garnish
Preparation
1. Prepare the Chicken: Place the chicken breasts or thighs in the bottom of the slow cooker.
2. Mix Sauce Ingredients: In a bowl, combine the cream of chicken soup, chicken broth, heavy cream, grated Parmesan cheese, Italian seasoning mix, and minced garlic. Mix well.
3. Add Sauce to Slow Cooker: Pour the sauce mixture over the chicken in the slow cooker.
4. Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
5. Shred Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
6. Cook Pasta: Cook the pasta according to package instructions until al dente. Drain and add the cooked pasta to the slow cooker, stirring to combine.
