Creamy Tuscan Shrimp :
Ingredients
β 1 pound large shrimp, peeled and deveined
β 2 tablespoons olive oil
β 1 tablespoon butter
β 3 cloves garlic, minced
β 1 cup cherry tomatoes, halved
β 1/2 cup sun-dried tomatoes, chopped
β 1/2 cup heavy cream
β 1/4 cup chicken broth
β 1/2 cup grated Parmesan cheese
β 1 teaspoon dried basil
β 1 teaspoon dried oregano
β Salt and black pepper to taste
β 2 cups fresh spinach
β Fresh basil or parsley for garnish (optional)
Preparation
1. Cook Shrimp: In a large skillet, heat olive oil and butter over medium heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from the skillet and set aside.
2. SautΓ© Garlic and Tomatoes: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Add cherry tomatoes and sun-dried tomatoes, and cook for 3-4 minutes until the tomatoes start to soften.
3. Make Creamy Sauce: Pour in the heavy cream and chicken broth. Stir well and bring to a simmer. Reduce heat and cook for 2-3 minutes until the sauce thickens slightly.
4. Add Cheese and Seasonings: Stir in the grated Parmesan cheese, dried basil, dried oregano, salt, and black pepper
