Bruschetta is a great meal for those who want something on a hot summer day.  It’s flavorful, and with the addition of the tomatoes in there, when you bite into it, you’ll love this snack, and will want to munch on this too.

A lot of people also like this one because it’s a good appetizer. Think about it, these juicy tomatoes are simple, fun, and really tasty, and it can be the perfect way to really boost your appetizers. The best part is you can use all kinds of different tomatoes too. For example, If you like juicy tomatoes from the market, you can use that. If you just want to go to the grocery store, getting that and using this is a good thing too.

INGREDIENTS
FOR THE TOMATOES

1/4 c. thinly sliced basil

Pinch of crushed red pepper flakes

1 tsp. kosher salt

2 tbsp. balsamic vinegar

4 tbsp. extra-virgin olive oil

2 cloves garlic, thinly sliced

4 large tomatoes, diced

FOR THE BREAD

Extra-virgin olive oil, for brushing

large baguette, sliced ¼” thick on the bias

cloves garlic, halved

Steps

To make the tomatoes, you want to get a skillet and on a low-medium heat level, heat up the oil. Put the garlic in there and mix it until it’s golden, then take the skilled off the heat and let it cool down.

Put the tomatoes, vinegar, basil, red pepper flakes and salt together in a big bowl until everything’s mixed. Take the oil and the garlic in the skillet and put it in there.

Let this sit to marinate for a half hour.

Preheat your oven to 400 and brush two sides of bread with a light coating of oil before you put it on a sheet to bake. Toast this for up to 15 minutes or until it’s golden.  Make sure to turn these halfway during cooking.

Take it out, let the bread cool for a few minutes, and put halved cloves of garlic on top of it.

Coat the top of the bread pieces with some tomatoes and then serve!

How  long can I keep these?

Typically, you can leave this in the fridge for up to a week, but it’s important to note that you can freeze the bruschetta mix, get new bread, and then cover it on top if you’d like to save it for later.  It’s a good freezer meal snack!

Typically a spoonful of bruschetta is more than enough. You don’t need to put too much on top, but if you like to have more of the mixture that’s fine too. It’s very easy to put together, and it can be customizable.
