Ingredients:
– 3 cups mashed potatoes (prepared and cooled)
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 2 large eggs
– 1/4 cup chopped green onions (optional)
– 1/4 cup all-purpose flour
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– Cooking spray
Preparation:
1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with paper liners.
2. In a large bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, and chopped green onions (if using).
3. Stir in the flour, garlic powder, onion powder, salt, and pepper until well combined.
4. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
5. Spray the tops with cooking spray to help them brown.
6. Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the edges.
7. Let cool slightly before serving.
