Cheesy Chicken Fritters :
Ingredients
โ 2 cups cooked chicken, shredded or chopped
โ 1 cup shredded mozzarella cheese
โ 1/2 cup grated Parmesan cheese
โ 1/2 cup almond flour
โ 2 large eggs
โ 1/4 cup finely chopped onion
โ 2 cloves garlic, minced
โ 1/2 teaspoon dried oregano
โ 1/2 teaspoon dried basil
โ Salt and black pepper to taste
โ Olive oil, for frying
Preparation
1. Combine Ingredients: In a large bowl, mix together the cooked chicken, shredded mozzarella cheese, grated Parmesan cheese, almond flour, eggs, finely chopped onion, minced garlic, dried oregano, dried basil, salt, and black pepper until well combined.
2. Form Fritters: Shape the mixture into small patties or fritters, about 1/2-inch thick.
3. Heat Oil: Heat a few tablespoons of olive oil in a large skillet over medium heat.
4. Fry Fritters: Fry the fritters in batches, cooking for about 3-4 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove and drain on paper towels.
