Strawberry pie is really good, and this pie is based off Big Boy, a chain in the US that has a killer strawberry pie.
Even if you’re not familiar with big boy, strawberry pie is still really good. And the cool thing about it is, if you’re interested in strawberry pie, but don’t live anywhere in the US where you can get it, or have no means of getting git, don’t fret.
This recipe does mimic the Big Boy strawberry pie and is a little bit better than it, and for some people, this is the pie that you will definitely enjoy, and something that you won’t be able to regret the moment you taste it.
Ingredients
Pie Crust ingredients:
1 cup all-purpose flour
4 ounces butter at room temperature
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Strawberry pie filling ingredients:
1 cup water
3/4 cup granulated sugar
1/4 teaspoon salt
2 tablespoons cornstarch
1/4 teaspoon red food coloring
1 quart strawberries rinsed, stemmed, and dried
1 pint whipped cream for garnish
Directions
For the pie crust:
- Preheat your oven to 350, and you want to then prepare a pie pan that’s been greased with some butter.
- You then want to get a bowl and make your crust through combining your butter, vanilla, flour, and powdered sugar, mixing all of this thoroughly and then putting it along the bottom parts of the pan. Once the pie crust is in there, get a fork, and the prick every single part of this.
- Bake this for around 10-15 minutes, until everything’s browned lightly. Then, take it out of the oven and fully remove this and let it cool.
For the pie filling:
- While you have the crust baking, you can then make the pie filling.
- To do this, mix the water, the salt, the granulated sugar, the cornstarch, and your food coloring together in a saucepan that’s small.
- Cook this along medium heat levels with a constant stirring. Make sure that you don’t let up on stirring because you want this to be nice and thick. You’ll have to do this for around 5 or so minutes, until everything properly thickens up.
- Take this off the heat, and let it sit along the side to properly cool.
- While this cools, take the berries, and put them inside the cooled crust. Take your glaze that you’ve made once it’s cooled a bit, and then put it neatly over the top of this until everything’s fully inside and it’s properly mixed with the rest of the pie.
- Once this is done, let it sit and refrigerate until the glaze sets in, usually about an hour or so.
- Take it out, slice it up, and then serve this with a dollop of whipped dessert or whipped cream for best results as a killer topping

How should I store this?
Because you want to make sure that nothing goes bad in this, this pie is best left in the fridge until you’re ready to eat it.
If you have leftovers, put it in the fridge, and when you want a slice, take it out, slice it up, and serve! Some people like to warm it up a bit, but that’s ultimately their call on how they want to eat this.
