Instructions:
- Prepare the Beef Roast:
- Preheat your oven to 325°F (165°C).
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Season the beef roast with salt and pepper, then sear it on all sides in the pot until browned. Remove and set aside.

- Once the roast is done, remove it from the pot and set aside to rest. Discard any excess fat from the pot.
- In a small bowl, mix flour with water to create a slurry. Stir the slurry into the cooking liquid in the pot.
- Simmer over medium heat, stirring constantly, until the gravy thickens. Stir in butter and season with salt and pepper.
- Serve:
- Slice the beef roast and serve with mashed potatoes, green beans, and gravy.
