So you’ve got some overripe bananas which you want to dispose of. Or maybe you’re just craving a banana-flavored treat, and you feel like whipping up something quickly. The banana drop cookie is a great way to convert your overripe (or not) bananas and to quench that banana flavored craving.

This is one of those cookies that you might want to reserve for a special occasion with a loved one or an event that gathers your entire family – they are so good that it feels almost criminal to eat them alone. This soft, fluffy, delicious cookie is really easy to make and trust me, everyone would love you for making them one of these.

Ingredients

2¼ cup flour
½ teaspoon ground cinnamon
¼ teaspoon salt
2 teaspoons baking powder

¼ teaspoon baking soda
¼ teaspoon ground cloves
2/3 cups butter or margarine
1 granulated sugar

2 Eggs, beaten
1/2 vanilla
1 bananas, mashed

The Process

Step 1:

Mix flour, cinnamon, salt, baking powder, baking soda, and cloves in a large mixing bowl. Stir well until the contents are properly mixed then set aside.

Step 2:

Transfer butter and sugar to a mixer bowl and beat properly for 30 seconds. Add eggs and vanilla, and then continue beating. While beating, add the dry ingredients (from step 1) in aliquots, and then add bananas one at a time. Ensure to beat well after each addition.

Step 3:

Use a teaspoon to transfer cookies onto a well-greased cookie sheet. Ensure that portions are kept 2 inches apart on the cookie sheet.

Step 4:

Transfer cookie sheet with contents to a preheated 400 degree oven. Bake cookies for about 12 minutes, until brown and then take out of the oven. Immediately transfer baked cookies to a wire rack to cook.
Step 5:

Enjoy cool cookies with a warm glass of milk or cup of tea.

Tips:

Cookies have a bread consistency so ensure not to over bake. Just bake until cookies become brown.
You can frost cooled cookies with Banana Butter Frosting.

For the frosting, combine powdered sugar, mashed banana, butter and vanilla, and if necessary additional powdered sugar to make a spreading consistency. Spread frosting richly over cooled cookies.
