Ingredients:

4 boneless, skinless chicken breasts

1 cup mayonnaise

1/2 cup shredded Parmesan cheese (plus a little extra for sprinkling on top if you choose)

Salt

Fresh ground pepper

1 tsp. Italian seasoning

½ tsp. garlic powder

Directions:

Preheat oven to 350°F.

Lightly oil a 9 x 13 baking dish with olive oil. Season the chicken breasts with salt and fresh ground pepper and place in the baking dish.

In a bowl, combine the mayonnaise, parmesan cheese, Italian seasoning, and garlic powder.

Spread the mixture on top of each of the chicken breasts. I like to sprinkle a little extra parmesan on top, but it is still fantastic without.

Bake for about 40-45 minutes – using a meat thermometer the internal temperature at the thickest part of the chicken breast should be 165°F. The juices should run clear and the tops of the chicken should be golden brown.

Enjoy!

Notes:

* Fresh parmesan really elevates the flavor but if you do not have any, it will still be delicious!
* It is important to use a meat thermometer to ensure the internal temperature is 165°F. Not only for safety but you also do not want to overcook the chicken. A meat thermometer is a great tool to have in your kitchen!
