Baked Feta with Chickpeas :
Ingredients
β 1 block (7-8 oz) feta cheese
β 1 can (15 oz) chickpeas, drained and rinsed
β 1 pint cherry tomatoes, halved
β 1/4 cup olive oil
β 2 cloves garlic, minced
β 1 teaspoon dried oregano
β 1/2 teaspoon red pepper flakes (optional)
β Salt and pepper to taste
β Fresh basil or parsley for garnish
β Crusty bread or pita for serving
Preparation
1. Preheat Oven: Preheat your oven to 400Β°F (200Β°C).
2. Assemble Ingredients: In a baking dish, combine the chickpeas, halved cherry tomatoes, olive oil, minced garlic, dried oregano, red pepper flakes (if using), salt, and pepper. Toss everything together until well coated.
3. Add Feta: Place the block of feta cheese in the center of the chickpea-tomato mixture. Drizzle a little extra olive oil over the feta.
