4 large potatoes, peeled and cubed
1/4 cup butter
1/2 cup milk or heavy cream

Preparation:
For the Meatloaf Cupcakes:
Preheat oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin.
Soak breadcrumbs: In a large bowl, combine the breadcrumbs and milk. Let it sit for a few minutes to absorb the liquid.
Mix the meatloaf: Add the ground beef, ground pork (if using), chopped onion, minced garlic, beaten egg, ketchup, Worcestershire sauce, thyme, salt, black pepper, and smoked paprika to the breadcrumb mixture. Mix until just combined. If using, fold in the shredded cheddar cheese.
Shape the cupcakes: Divide the meat mixture evenly among the muffin cups, pressing the mixture down to fill each cup.
Bake: Bake in the preheated oven for 20-25 minutes, or until the meatloaf cupcakes are cooked through and the internal temperature reaches 160°F (71°C). Remove from the oven and let them rest in the pan for a few minutes.
For the Whipped Potato Topping:
Cook the potatoes: While the meatloaf cupcakes are baking, place the cubed potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Mash the potatoes: Add the butter, milk or heavy cream, and sour cream (if using) to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
Pipe or spread the potatoes: Once the meatloaf cupcakes have cooled slightly, pipe or spread the mashed potatoes on top of each meatloaf cupcake to resemble frosting. You can use a piping bag with a large star tip for a decorative effect.
