Ingredients:
– 1 cup Arborio rice (or any short-grain rice)
– 2 cups whole milk
– 1 cup heavy cream
– 1/2 cup granulated sugar
– 1/4 teaspoon salt
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon (optional)
– 1/4 cup raisins (optional)
Preparation:
1. In a medium saucepan, combine the rice, milk, heavy cream, sugar, and salt. Stir well.
2. Bring the mixture to a boil over medium heat, stirring frequently.
3. Reduce the heat to low and simmer, uncovered, stirring occasionally, until the rice is tender and the mixture is creamy, about 20-25 minutes.
4. If using raisins, stir them in during the last 5 minutes of cooking.
5. Remove from heat and stir in the vanilla extract.
6. Let the rice pudding sit for a few minutes to thicken. Sprinkle with ground cinnamon, if desired, before serving.
7. Serve warm or chilled.
