Ingredients:
– 4 medium potatoes, peeled and diced 
– 3 carrots, peeled and sliced 
– 2 zucchinis, sliced 
– 3 tablespoons olive oil 
– 4 cloves garlic, minced 
– 1 teaspoon dried thyme 
– 1 teaspoon dried rosemary 
– Salt and black pepper to taste 

Procedure:
1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. 
2. Prepare Vegetables: In a large bowl, combine the diced potatoes, sliced carrots, and sliced zucchinis. 


3. Season and Toss: Drizzle the olive oil over the vegetables. Add the minced garlic, dried thyme, dried rosemary, salt, and black pepper. Toss until the vegetables are evenly coated. 




4. Roast: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until the vegetables are tender and golden brown, stirring halfway through. 
5. Serve: Remove from the oven and serve warm.
