Mini Chicken Pot Pies
Ingredients 🛒

For the Filling:

2 cups cooked chicken, diced (rotisserie chicken works great)
1 cup frozen peas and carrots mix (or fresh if preferred)
1/2 cup diced onion
2 cloves garlic, minced
1/4 cup butter
1/4 cup all-purpose flour
1 cup chicken broth
1 cup milk
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and pepper, to taste

For the Crust:

1 package (14.1 oz) refrigerated pie crusts (or homemade pie dough)
1 egg, beaten (for egg wash)
Fresh parsley or thyme, chopped (optional, for garnish)
