– 4-6 chicken thighs, bone-in and skin-on π
– 1 large onion, sliced π§
– 1 cup barbecue sauce π
– 2 tablespoons olive oil π’οΈ
– 1 teaspoon smoked paprika πΆοΈ
– 1/2 teaspoon garlic powder π§
– 1/2 teaspoon onion powder π§
– 1/2 teaspoon dried thyme πΏ
– Salt and pepper, to taste π§
– Fresh parsley, chopped (optional) πΏ

1. Preheat Oven: Preheat your oven to 400Β°F (200Β°C). Grease a baking dish or line it with parchment paper.
2. Prepare the Chicken: Pat the chicken thighs dry with paper towels. Rub them with olive oil, smoked paprika, garlic powder, onion powder, dried thyme, salt, and pepper.
3. Arrange the Onions: Place the sliced onions in the bottom of the prepared baking dish. Arrange the seasoned chicken thighs on top of the onions.
4. Add Barbecue Sauce: Pour the barbecue sauce over the chicken thighs, making sure they are well coated.
5. Bake: Bake in the preheated oven for 35-45 minutes, or until the chicken thighs reach an internal temperature of 165Β°F (74Β°C) and the skin is crispy. Baste the chicken with the barbecue sauce halfway through cooking if desired.
6. Serve: Garnish with fresh parsley if desired. Serve the baked barbecue chicken thighs with onions over rice, potatoes, or with a side salad.
