Lunch Lady Brownies Recipe
Ingredients:
- 1 cup (2 sticks) unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
For the Frosting:
- 1/4 cup (1/2 stick) unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- Make the Brownie Batter:
- Melt the butter in a large mixing bowl (you can do this in the microwave or on the stovetop).
- Stir in the sugar until well combined.
- Add the eggs, one at a time, mixing well after each addition.
- Add the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Bake the Brownies:
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
- Allow the brownies to cool completely in the pan on a wire rack.
- Make the Frosting:
- In a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and cocoa powder, beating until well combined.
- Add the milk and vanilla extract, and beat until the frosting is smooth and spreadable.
- Frost the Brownies:
- Once the brownies are completely cooled, spread the frosting evenly over the top.
- Serve: Cut into squares and enjoy!
