Lunch Lady Brownies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract

For the Frosting:

  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Make the Brownie Batter:
    • Melt the butter in a large mixing bowl (you can do this in the microwave or on the stovetop).
    • Stir in the sugar until well combined.
    • Add the eggs, one at a time, mixing well after each addition.
    • Add the vanilla extract.
    • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  3. Bake the Brownies:
    • Pour the brownie batter into the prepared pan and spread it evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
    • Allow the brownies to cool completely in the pan on a wire rack.
  4. Make the Frosting:
    • In a medium bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar and cocoa powder, beating until well combined.
    • Add the milk and vanilla extract, and beat until the frosting is smooth and spreadable.
  5. Frost the Brownies:
    • Once the brownies are completely cooled, spread the frosting evenly over the top.
  6. Serve: Cut into squares and enjoy!
